REFLECTIONS SETTING ON THE PORCH

*OLD LADY LOOKS GOOD OUTSIDE. BUT ROOF IN STORAGE AREA LEAKS DUE TO ROTTEN ROOF JOISTS. REPAIRED SOON.

* WONDER IF WW II SCRATCHED ON PORCH COLUMN MEANS. END OF WW II ?

* CLASS OF 55 HAD NICE REUNION.

*COMMUNITY CONCERT JAM WENT GREAT. MANY THANKS TO ALL WHOM MADE SUCCESSFUL.

*EVENT HONORING VETERANS OF ALL AMERICA’S WARS 0N 11-7 WAS GREAT. ABOUT 40 ATTENDED. THANKS TO ALL HELPING MAKE SUCCESS.

*OLD CENTRAL HEATING IS ABOUT WORN OUT & INEFFICIENT. PLANS ARE TO ADD ANOTHER SPACE GAS HEATER.

* SHORTER A COLUMNS THIS TIME DUE TO SENDING OTHER ITEMS

*NEW ROAD SIGN DONATED BY 1955 PHS CLASS (BE UP SOON)

CHRISTMAS OPEN HOUSE ON SUNDAY, NOV. 28, 2-4

 

 

THIS AND THAT’S

THANKSGIVING:

1.SOME MIGHT REMEMBER THAT OLD FOLKS DID NOT “DO” THANKSGIVING DUE TO BEING MR. LINCOLN’S DAY & YANKEE HOLIDAY. MEMORIES OF CIVIL WAR & HARDSHIPS WERE REMEMBERED.

2. LOCAL FOLKS USING THANKSGIVING AS DAY TO CLEAN UP CEMETERIES FOR WINTER.

3. MANY SCHOOL KIDS ONLY HAD TURKEY AT THANKSGIVING & AT CHRISTMAS IN PANTEGO HIGH LUNCHROOM.

4. THANKSGIVING DAY WAS DAY WHEN FRUIT CAKES WERE MADE and COOKED; SO COULD BE AGED FOR CHRISTMAS.

5. WHEN EATING YOUR TURKEY, THINK ON THIS “RECIPE” FOR COOKING POSSUM.

 

                                                            “MISS” LENA WHITLEY’S RECIPE FOR COLD WEATHER POSSUM

 

CUT HEAD OFF WITH AN AX AT WOOD PILE; SKIN BUT LEAVE TAIL; GUT AND WASH WELL

HANG UP BY TAIL ON BACK PORCH TO DRAIN BLOOD AND AGE;

(REMEMBER TO KEEP OUT OF REACH OF DOGS)

 

CUT UP LIKE DO COON OR LEAVE WHOLE; DO NOT LEAVE TAIL (CHILDREN LOVE TO PLAY WITH TAIL).

IF CUT UP OR NOT; GET BIG POT WITH LID

ADD VINEGAR, SALT, RED AND BLACK PEPPER IN WATER; BUILD UP HOT FIRE IN STOVE; AND BRING TO BOIL; ADD POSSUM; PAR BOIL FOR WHILE BUT NOT TILL TENDER; LET FIRE DIE DOWN; AND LET VINEGAR WATER GET COLD;

LET SET FOR WHILE TO LET GREASE SET. SKIM GREASE FROM POT AND SAVE. TAKE POSSUM FROM POT AND THROW WATER AWAY.

 

WHOLE POSSUM

BUILD FIRE FOR OVEN UP HIGH. GREASE WITH POSSUM GREASE; COOK UNCOVERED; KEEP FIRE LOW TO MEDIUM UNTIL TENDER AND MEAT ABOUT READY TO FALL FROM

BONES; COVER WITH WET DISH RAG FOR WHILE; BEST EAT WHILE WARM.

 

POSSUM PIECES

BUILD FIRE UP ON HIGH; TO POT ADD, SALT, AND BLACK AND RED PEPPER; LET BOIL FOR WHILE; ADD PIECES; BOIL UNTIL JUST ABOUT TENDER ON LOW FIRE; BUILD FIRE BACK ON HIGH; ADD MEAL DUMPLINGS OR JUST HANDFUL OF MEAL; BOIL ON MEDIUM HEAT UNTIL COMES TO THICK GRAVY.

(Written in early 1950s by MWR ; rewritten 1960s.“Miss Lena” was mother of Mrs. Gladys Whitley Lollis (long time teacher at PHS and Doris Whitley Windley (nurse).

 

SO NEXT TIME YOU SEE FRESHLY RUN OVER POSSUM. GRAB IT & ENJOY!
